A salad inspired by Ottolenghi

To continue the story of the blue cheese (see yesterday's post). I was wondering to serve it to do it justice. What ingredients did I have? It was one of those days when everything just came together so well. It was delicious.

Ingredients: Harbourne Blue Cheese; sweet potato, roasted peppers; cucumber and toasted seeds (sunflower and pumpkin). Dressing: olive oil, lemon juice, sumac, salf and pepper.
