Hedge Laying

The characteristic hedges of south-west England are formed by cutting young beech saplings enough to bend them over to be staked down flat. Known as hedge laying, this encourages side shoots to grow upwards providing a dense stock proof and sheltering hedge. Why waste good cider drinking time on all that tedious dry stone walling that they do "oop north"
