Torta di Pane

Dry bread 300g
Milk 1l
Lemon peel three pieces
Sugar 100g
Eggs 2
Amaretti 120g
Pine nuts 100g
Salt ½ tsp
Grated parmesan 1 tsp

Leave the bread to soak in the milk with the lemon peel. When the bread is soft it can be all broken up. Add the sugar, eggs, crushed biscuits, nuts, salt and parmesan. Stir to incorporate into a rather sloppy mixture. Place in a greased cake tin and bake at 180 degrees C for 1 hour.

It is my wife's birthday so I am making a cake.
