coffee and ginger cake

Homemade melanzane for tea (with cream cheese instead of mozzarella - pretty good substitute in the end!) followed by a slice of this beautiful-looking cake.

I wanted to make a coffee cake but using a new, fresh recipe. This is one by Dan Lepard and it looks amazing and tastes good, but it's just not the same as your old-school coffee cake made with Camp Coffee and walnuts :)

Anyone fancy a slice?
