Pyclets
This is Mark and Martin who run the Derbyshire Pyclet Company in Derby.
At the moment they only operate in the city square, but plans are afoot to see them opening their own cafe in the near future.
It sounds great and the pyclets taste good and are a really fun thing to eat.
Here is a brief history of the Pyclet.
The pyclet is a traditional leavened bread indigenous to Derbyshire and similar to a flat crumpet.
Local production ended a generation ago, until friends Mark and Martin resurrected and re-invented them from an old bakery in Derby's city centre.
They're great toasted and dripping with butter and work really well with scrambled eggs and smoked salmon.
