Baileys Cheesecake in the making


This plate is the result of the above.

This cheesecake is actually lighter than most as it's almost half whipped cream. To hold the volume it is set with gelatine. So it is a moussy kind of cheesecake. The base is digestive biscuits with dark chocolate blended into it. Normally I would use chocolate hobnobs but I didn't have any.
