Three Cheese Chilies

It seems quite a few of my blip entries center around food of some kind especially here in Mexico. Most times they are of some kind of street food or a great local restaurant. Today, my wife and two friends at the complex made three cheese & shrimp stuffed chilies and rice for lunch. She tells me they adapted the recipe as they went. While they did the all hard work, I played volleyball at the beach. We then met in our apartment to eat (our first dinner party since arriving!) these delicious concoctions. I tired to make up for being absent during the cooking phase by doing the dishes, which I would gladly do anytime for a lunch like this.
