Breakfast Preparation

We're having croissants for breakfast tomorrow. We buy uncooked frozen ones at Trader Joe's. When baked, they're as flaky and buttery as any we've had from a French boulangerie.

The dough needs to proof for twelve hours after thawing, so we put them in the warmest place in the house overnight -- the hall closet. The ground floor heating manifold is on the back wall and all the hot water pipes run through the floor. It's toasty in there!

I'll be thinking about croissants as I fall asleep tonight. Maybe I'll even have sweet dreams.
