Aubergine Miracle

I do not like aubergines, the slimyness of them is horrid. But they do have a lovely taste when done right. Today was one of those days. The Mrs made a Hugh dish of aubergine with mozarella, onion and various herby things. It was lush :-P

Today we are aiming to bake three cakes. Must go....
