Nose to tail eating

In most European countries it's not uncommon for families to nurture a pig for slaughter. Every bit of it is then ritually carved up for the table. I have heard the expression "everything but the oink!"

This tradition has fallen out of fashion in central London, however with the recession biting my local butcher in Kensal Green feels it fitting to feature some of the cheaper cuts of meat in his window.
