Poached is my favourite. Trouble is, most of my life, I've either cheated, using a 'poached egg pan' or I've ended up with something that looks more like a banana Eaton mess than an egg!

My grandmother and my mum always used to make poached eggs with vinegar in the water. It's how I like them, with that slight hint of vinegar. Then one day a couple of years ago, I asked Tom the trick of his trade. How to poach an egg so that it doesn't fall apart and mix all up with the water.....and he showed me. He even told me a story of how, when working at Chateau Montreuil in Northern France, he and the other chefs had a competition to see who could make the perfect poached egg, (I'm pretty sure he won...or at least, that's what he says!), working their way through dozens and dozens of them in their attempt to perfect the art with the majority finding their way into the bin.

There's nothing better than a couple of poached eggs on some ham and toast on a Sunday morning! If only I could make Hollandaise sauce, I could have Eggs Benedict every Sunday! But first, I have to perfect the poached egg. I'm getting better. You can see the outline of the egg now at least, however, in the trade, they would trim off the whispy bits around the edges to define the egg better, but me, I don't like to waste a scrap!

All I need now is a Sunday morning when B isn't working and we can sit and have them together, that way, I''ll make sure...."I'm satisfied....as long as I get my kiss!"

PS - and BTW, these were near perfection with the whole yolk still perfectly runny!
