Russian sauerkraut

At this year's Art in Nature Festival, there was a Russian performance area, with musicians, dancers and cooks. We missed the musicians and dancers, but these cooks were demonstrating how to make Russian sauerkraut: lots of chopped-up cabbage, lots of chopped-up carrots, lots of salt, then throw it all into a pot, which you leave in a warm place for three days. There you have it!
