Delicata Squash
Last year, our CSA introduced us to a variety of winter squash called Delicata. It has a yellow flesh that is the sweetest of the winter varieties. If you like sweet potatoes, you'll love this squash.
This particular specimen is from my very own garden. I'm very excited to have it because about a month ago, I thought the squash plant was a goner. It appeared to have squash borer damage at the base of the vine. I cut it open, dug it out a bit, and covered it with fresh dirt in hopes it would re-root and survive. It lasted long enough to provide me with this and 2 others that will be ready in the coming week. Yum!
