Potato Salad

In the absence of sun, I made some sunny-coloured food. Wishful thinking for sure, because today's thunderstorms are set to continue all weekend.

Woz in it?

potatoes - coarsely mashed
red onion - thinly sliced
cucumber - just a little, for crunch
white cabbage - parboiled, finely shredded, and macerated in cider vinegar to 'pickle' it
good lemony mayo (homemade, if you can be bothered)
additional cider vinegar to balance out the mayo
cayenne pepper or Tabasco (oh go on!)
salt and freshly ground black pepper
chopped hard-cooked egg to scatter over the top

Quantities and proportions are up to you. Which is my way of saying I never pay attention to these things when I'm cooking, and by the time I'm done I can't remember anyway. Taste as you go along. Recipes may let you down but your sense of taste never will. Fact.

Make enough to have leftovers because this always tastes better the day after.
