West Philly Po'boy

Tonight, Nature's gods conspired with me to invent the West Philly Po'boy Sandwich. Catfish nuggets batter-fried with black pepper, paprika, and bread crumbs; Heirloom tomato, cucumbers from my friends' garden picked yesterday; The best cheese on the planet, from Lancashire in the shape of a ball --all on fresh olive bread from a bakery in my neighborhood, with mayonnaise. I'm a sandwich man from way back, and this thing is as good as it ever gets. I'll think about it for a week. I may not brush my teeth for a little while. I'll be breathing my burps back in, just to taste the sandwich again.

I was browsing through people's blips and someone in Chicago mentioned having a po'boy at a diner. It's a favorite from Louisiana (means 'poor boy') that has made beach-heads all over the US. Also, I recently discovered the Pittsburgh Steak sandwich, which has its own unique character. So tonight I got on a mission to make a really good sandwich with the things I had on hand, and all the stars were in their right places, because a great diner food is born, and it goes well with a glass of milk.
