Glyn Purnell's Burnt English Custard Egg Surprise
I am a fan of the chef Glyn Purnell (even though he is a Bluenose - a Birmingham City supporter).
I've wanted to go to his city centre restaurant (Purnell's) in Birmingham for a long time and today was the day. It's fabulous and the lunch menu doesn't require a second mortgage! He is well known for saying that he doesn't want to be a celebrity and it is absolutely true that he is present for all lunch and dinner sessions at his restaurant. Cooking is his passion, and a very special talent.
Glyn has appeared on a number of UK television programmes (and maybe been shown all over the world.) He is a regular on Saturday Kitchen with James Martin and won the dessert category on the "Great British Menu", where he is now a judge.
His signature dish is this "Burnt English Custard Egg Surprise - with marinated strawberries, crystallised tarragon, and black pepper honeycomb." It was a wonderful combination of flavours and the egg part was luscious and smooth and heavenly. It's put into a real egg shell and the top becomes a bit like creme brulee only better.
