Mochacinno Meringues

These are the meringues I made the other day. They keep beautifully in a tin so you can whip up a pudding in a flash!


We seem to be running with a bit of a coffee theme chez Cats&Dogs so these are filled with fresh, whipped double cream with espresso and vanilla folded in and as if that were not enough, a layer of grated chocolate right though the middle


I also made MORE crispy cakes, another two dozen, these were all gone by Thursday when I made EVEN more and they were all gone by yesterday.

I shall be glad when the school holidays are over all I am hearing is "Muuuuu-UUUUMMMM, we are hungry, is there anything nice to eat??"
