Vegging out

For tea tonight I made one of Mattmoo's fave meals - we call it spanish chicken because once upon a time that's what it was - chicken in a spanish-esque sauce.

Over the years however it has evolved to include sweet potato and has lost the paprika but evolution can be a wonderful thing!

so this is the veg prepared, olive oiled, seasoned and ready to go into the oven to be roasted to make the sauce.

It was yummy I have to say :-)
