Baskets in Caldbeck

I have been up to Caldbeck in Cumbria today. I don't know - all that pretty scenery and chocolate box cottages and I photograph wicker baskets. I think it is because they reminded me of junior school ( the last two years). Once a week we would walk half a mile to school with a wicker basket full of ingredients, and then walk home again with something delicious. I wish I had some of those recipes now.

How do you make that lemon pudding and what is it called (cake at the top and sauce underneath) ? I remember that it was just one mix and that you put the cake tin in a bowl of water during cooking. I want some lemon cake pudding NOW with lots of custard.
