Tajine Seasoning

How to season your tajine;
1) The tajine needs to be submerged in cold water for at least one hour
2) Rub the inside of the base and lid with olive oil
3) Put in cold oven and set temperature for 180. Leave in oven for 2 hours.

Apparently this strengthens your tajine and helps you get the best flavours. So now you know ... Lamb tajine for dinner tomorrow night.
