Eggplant pasta

Made Rigatoni with Sweet Tomatoes, Eggplant and Mozzarella from Jamie Oliver's Jamie's Dinners. I love figuring out what ingredients I have on hand and then finding a recipe that I can make. It was supremely tasty - and used asian eggplants instead of regular ones.
