homemade thin mint ice cream sandwich

i love baking. period. so after being away from a well functioning oven and access to the ingredients im used to for four months, i thought it was time i spent a few hours making some cookies. i chose to make some homemade thin mints, as i have been eyeing a recipe for them for a while. and boy are they yummy! especially with a little dollop of vanilla ice cream. mmm mmm good
