shallot compote

chop 3 long shallots lengthwise
chop 1/2 red pepper very small (1/2 cm square)
heat a little olive oil in a medium frying pan
cook onion for 3 or 4 mins stirring constantly
add red pepper
add 2 tsps sugar (brown if you have it)
add a glass of red wine
add a tbsp of balsamic
cook for a further 5 mins till wine has reduced

yummy!
