Celebration...
Baked up a dozen of my famous homemade German Chocolate cupcakes this morning - one of my favorite desserts. They are for a friends welcome home party tonight, it was a special request ;)

HOMEMADE GERMAN CHOCOLATE CUPCAKES
BATTER
1 1/4 cups all-purpose flour
3/4 cups granulated sugar
3/4 teaspoons baking soda
1/4 teaspoon salt
1/2 cup butter, softened
1/2 cup sour cream
2 large eggs
3 ounces sweet baking chocolate, melted
1/4 cup milk
3/4 teaspoon vanilla extract
FROSTING
3/4 cup evaporated milk
1/2 teaspoon vanilla
1/2 cup light brown sugar, firmly packed
1/2 cup butter
1 can (3 1/2 ounces) unsweetened flaked coconut, or about 1 1/3 cups
1 cup chopped pecans
Preheat oven to 350 degrees. Line a 12 cup muffin pan with paper liners.
In a large bowl, combine flour, sugar, baking soda, salt, butter, sour cream, eggs, chocolate, milk, and vanilla.
Beat with mixer at low speed until blended. Increase mixer to high and beat 2 minutes longer. Pour batter into prepared cupcake cups (¾ full).
Bake in the oven for 25 minutes, or until a wooden pick or tester inserted in center comes out clean. Remove cupcakes and cool on rack.
Make topping: In a saucepan over medium heat, bring evaporated milk, vanilla, brown sugar, and butter to a full boil; remove from heat. Stir in coconut and pecans. Set aside to cool to room temperature.
When cupcakes are cool - fit a pastry bag with a small tip. Fill bag with frosting and push the tip through the bottom of the cupcake liner to fill each cupcake. Top with remaining frosting and enjoy!!
