Rhubarb and strawberry meringue pots

This is the sixth in the fortnightly series, and on this occasion proved not universally popular.

Personally, I liked the pudding, as I'm a big fan of all things rhubarb, but not so sure the rest of the household agreed. Still, I make the desserts, so I get to choose!

Again, this was a pretty simple affair - rhubarb baked in the oven with sugar and orange rind, then the rhubarb is removed from the oven and strawberry jam and two egg yolks are added. The mixture is then put in individual ramekins and back in the oven for 10 mins. Meanwhile, egg whites are whipped up, along with some caster sugar. This mixture is then placed on top of the rhubarb and back in the oven for a further 10 mins. (although I think the meringue was a touch overdone - shouldn't have been just quite so brown on the outside I don't think!). Served straight from the oven (more or less).

A quiet day. Not so quiet tomorrow - back to work and then governors' meeting in the evening. *sigh*
