Drying Fruit

An excellent method for preserving certain fruit and vegetables is to dry them.
The sun is free, so a little bit of ingenuity, and fruit that may have rotted in times of plenty, get a new lease of life. A win win situation.

Today i went to the Centre for Appropriate Technology, to meet the V.S.O guys, but unfortunately I didn't meet them, as they went to Lilongwe for a meeting and will be in on Friday.
In the Centre for Appropriate Technology, the V.S.O volunteers will be working on Solar panels which will be used in villages for drying fruits and vegetables.They have just come, and this is their first week.
On the pictures are, Rose Mhango in Red, Charity was testing the dried bananas, and the other woman is Dorica Nkhata.
I will visit them again on Friday.

I was also working on the program for the D.I.T's visit to Malawi, I will send it to you when its done.
