I'm in the Mood for Breakfast

I'm pretty much always in the mood for breakfast. Surprise? I think not. :)

Yesterday for lunch, what started out as a desire to eat pancakes turned into a hearty meal of pancakes, an egg scramble with all our leftover veggies & bacon, and potato hash. It was colorful, it was filling, and it was YUMMY.

I hate pulling the griddle out because of the sheer size it takes up on our tiny counterspace, but this was totally worth it! :)

Working on concocting "Everything-but-the-kitchen-sink" cookies - hopefully pics to follow before the weekend's up. Wish me luck!
