Amaretti in the afternoon

We're counting down the days before we up sticks and move south to the Big Smoke. And while we wait, I see no reason not to separate white from yolk, add sugar and almonds and bake something sweet to ease the packing process.

Today, it was amaretti, with a little too much Amaretto.
